First, place the pieces of bread in the bottom of a greased 9×13-inch or any 34-quart oven-safe dish. I usually use this glass pan or the pictured red ruffled baking dish, which comes in a set with other sizesdefinitely a splurge, but Ive found the quality to be excellent. Set that aside and pre-cook your vegetables and meat . You can do this all in 1 big skillet on the stove, adding onion, garlic, and optional herbs like dried rosemary or your favorite seasoning blend. As thats sizzling on the stove, whisk the eggs, milk, and cheese together:

Now its time to assemble, and Ive made this process a lot easier over the years. Spoon all of the vegetables/meat mixture on top of the bread. Pour the egg mixture all over that:

Why should you bake a brownie when it has eggs inside? It is best to bake your cake uncovered to get a golden brown and set center. After baking, an egg bake can be kept in the refrigerator for up to two hours. If you have any leftover egg bake, it can be stored in the fridge for up to four days or frozen for up to three months.

Broccoli Egg Cheese Sausage Casserole

Start by gathering the ingredients. Youll need

  • 8 Ounces of Sausage/Turkey/Hamburger
  • 3 Cups Frozen Broccoli
  • 1 Cup Shredded Cheddar Cheese
  • 1 Teaspoon Dried Basil
  • 1/2 Teaspoon Pink Himalayan Salt
  • 8 Large Eggs

Next, youll want to brown your sausage/meat. Once browned, drain and pour into a large mixing bowl.

Add your thawed, frozen broccoli, cheese, herbs, and spices into the bowl and mix well.

Beat your eggs in a separate bowl and then add into the broccoli mixture.

Pour the mixture into your Arthur Court baking dish or into individual muffin tins.

Bake for 30 minutes or until golden brown. The middle should be firm and a toothpick should come out of the center clean!

That is all there is to it! It is so delicious and it reheats wonderfully! For leftovers, I like to take a slice and pop it into my Ninja Foodi Air Fryer for breakfast or dinner. Oh man, it is so good!

Speaking of Air Fryers if you dont have one yet, you need one. Ive been using an air fryer for a few years but I recently purchased this double basket Ninja Foodie Air Fryer and we LOVE it! It is so nice to be able to cook meat on one side and veggies on the other. You can program the sides to finish at the same time, but you can also use them completely separate. It is great for quickly warming food up without it getting soggy. It has options to bake, air fry, roast, dehydrate, plus a few more. I use ours daily! Of course I have it in white and I love how clean it looks.

How To Make Egg Muffins

  • Preheat oven to 375 degrees.
  • Crack eggs into a large mixing bowl and add half and half. Using a fork pierce the yolks then whisk with the fork until just combined.
  • Add ham, bell pepper, cheddar, green onions, parsley, salt and pepper. Stir with the fork.
  • Spray a 12-cup muffin pan well with non-stick cooking spray. Fill each with about 1/3 cup of the mixture .
  • Bake in preheated oven until eggs are just barely set, about 19 23 minutes.
  • Let cool in pan about 5 minutes then serve or cool on a wire rack about 30 minutes if storing in the fridge or freezer.

    How To Make Sausage Breakfast Casserole

    Youll start by cooking the sausage on the stovetop. While its cooking, make the custard by whisking together the eggs, half-and-half, dry mustard, salt, and pepper. Add the sandwich bread , cooked sausage, and half of the cheese. Stir to combine, which helps distribute the ingredients more evenly than layering them in the baking dish. Then, pour the mixture into the dish, sprinkle with the remaining cheese, and bake until golden-brown.

    No Refrigeration Time Required

    A lot of breakfast casseroles require you to assemble the casserole and refrigerate it overnight before baking. This sausage and egg casserole, however, doesnt have to refrigerate at all! You can throw it together from scratch in 5-10 minutes, pop it straight into the oven, and enjoy it 30 minutes later!

    ASSEMBLE. Line bottom of greased 9×13 inch baking dish with biscuit dough, firmly pressing to seal. Sprinkle with your choice of meat and cheese. Whisk together eggs, milks, salt, and pepper in a medium bowl until blended, then pour the egg mixture over the sausage and cheese.

    BAKE. Bake at 425° for 25-30 minutes, or until set. We recommend letting the casserole rest for at least 5 minutes before cutting and serving.

    Note: Oven temperatures can vary. Make sure to bake the casserole for a little more or less time depending on your oven.You dont want the casserole to be runny, or to dry out so adjust cooking time as needed.

    When you think its done, stick a knife into the middle and see how soft it is. This will help to make sure its cooked to your liking.

    Can I Refrigerate Breakfast Casserole Before Baking

    Yes, prepare your breakfast casserole up to the point of baking. Cover tightly with foil and refrigerate overnight. Pull the casserole out the next morning and let it warm up a bit while the oven is preheating. Bake according to recipe instructions. Additional baking time may be needed if the casserole is still chilled from the refrigerator.

    Another option is to prepare and bake the breakfast casserole as the recipe calls. Let cool, cover and refrigerate. The next morning, warm up the casserole in a 350 degree F oven until warmed through.

I usually purchase uncooked sausage for this and brown it with some dried rosemary or Italian seasoning to give it a little extra flavor, but that is optional. If the meat youre using is pre-cooked, such as diced ham or shredded chicken, you can mix it with the cooked vegetable mixture before layering it into the dish.
  • Starch: Like when making breakfast strata, sausage stuffing, and cream cheese French toast casserole, the bread should be slightly stale so it can soak up moisture. Crusty sourdough is FANTASTIC here. You can also use homemade artisan bread, a loaf of French bread, crusty baguette, biscuits, bagels or homemade bagels, or even day-old croissants . To make it gluten free, use gluten-free bread or potatoes.
  • Eggs, milk, & cheese: Whisk a dozen eggs with a little half-and-half or milk and stir in some shredded cheese. Like the vegetables and meat, use whatever cheeses you like best, such as sharp cheddar, pepper jack, feta, and/or smoked gouda.

    Can I Make This Casserole Ahead

    If you want to save cooking time in the morning, you can brown your sausage the day before and keep it in the refrigerator until the next day. Then all you have to do in the morning is put everything together and bake.

    Or, if you want to save even more time in the morning, you can prepare everything the night before, cover with plastic wrap and keep in the refrigerator until ready to bake the next morning. This makes it the ultimate go-to breakfast casserole for both those lazy mornings where you just dont want to get out of bed, or busy mornings with a house full of guests!

    You Can Use Homemade Sausage In This Recipe

    You can use store bought sausage in this recipe, but I love using my homemade breakfast sausage mix. If using my homemade breakfast sausage recipe, skip the step on shaping the sausage patties. Just add the sausage meat directly into the skillet after mixing, and sauté it.

    You’ll only need half the homemade sausage recipe, so you can cut the recipe in half. But better yet, make the other half of the recipe into sausage patties and freeze them for another breakfast.
