Peanut Butter Protein Balls
This FitOn PRO breakfast recipe is low in sugar, full of protein and healthy fats, and made with a few simple ingredients. Swap peanut butter for your favorite nut or seed butter and add in any additional flavors youd like .
- 1½ tsp maple syrup
- ½ tsp baking powder
Step #1: Preheat the oven to 160°C or 320°F. Line a baking tray with baking paper.
Step #2: Add all of the ingredients to a food processor. Process until the mixture comes together and is smooth in texture.
Step #3: Using a spoon, add a tbsp sized dollop of cookie batter onto the lined baking tray. Flatten slightly using a fork. Repeat this process with the remaining cookie batter. Add an extra tsp of nut butter or a small chunk of dark chocolate to the top of each cookie.
Step #4: Bake in oven for 12-15 minutes, or until golden around the edges and cooked through.
Step #5: Store in an airtight container for 2-3 days, or store in the freezer in an airtight bag for 2-3 months.

But it wasnt always like that.
For years I used to rush out of the house, eating a sad bowl of cereals in front of my desk.
But when I started planning my meals, eating a healthy and balanced breakfast became one of my priorities.
Plus, meal prepping your breakfast ahead of time doesnt have to be complicated, and I promise you, it wont require tons of time.

Get That Griddle Going
Recipe for homemade pancake mix easy, check! Now lets make the pancakes!
In a large mixing bowl, combine the prepared dry pancake mix with milk, egg, and vanilla.
Get the griddle nice and hot over medium heat. Too hot and youll burn those cakes, not hot enough and your pancakes will never cook. Youll know its ready when the butter bubbles nicely on the surface of your skillet or griddle.
Pour 1/4 cup of pancake batter into the skillet. Repeat until the pan is filled, but the pancakes are not touching.
Pro-tip: pancakes are ready to flip when bubbles begin to form on the surface of the pancake .
Cook the pancake on the other side until golden brown and no longer gooey in the center, about 1 to 2 minutes longer.
Once your stack is ready for your crowd of eager pancake-eaters, serve with butter and plenty of maple syrup.

There are a few practices that you can implement that will help in serving healthier breakfasts and they all tie back to one thing- a Menu Plan.
Menu Plan: I like to have a master list of our favorite breakfasts. I factor in how much time I have in the morning, how much time the different recipes take to make and if a recipe can be made ahead of time. From there I determine which one will work best on each day. Some other considerations include:
- There are many breakfast items that can be kept in the freezer like Pancakes, Sweet and Savory Casseroles, Quick Breads and more. All you have to do is heat them up and eat.
- Go shopping so that you have ALL the ingredients youll need for the week.
- Assemble overnight casseroles and refrigerate. All you have to do is pop them in the oven while youre getting ready.
- Double up. We may not like eating the same breakfast each day, but we dont mind eating the same thing 2-3 different times a week.
- Cut any fruit the night before and keep in the fridge.
What breakfast meals are easy enough for kids to make?
Cereal is convenient and easy. Kids tend to love them and can prepare a bowl for themselves. Unfortunately, many cereals are so unhealthy you might as well eat a bag of candy. With a little bit of initial effort, you can teach your kids how to make a healthy, easy breakfast all on their own.

Heat oven to 350 F. Line a baking sheet with parchment paper.
In a large bowl, mix the flour, cacao powder, Golden Blend, sugar, baking powder and plant milk until all the ingredients are combined.
Using clean hands, roll about 1 tablespoon of the batter into balls and place on the baking sheet. Leave about 2 inches between each cookie.
Flatten each ball and shape cookies into circles. Feel free to top with some dark chocolate chips or slivered almonds.
Bake for about 15 minutes. Remove from the oven, cool and enjoy!
Egg And Sausage Balls
These go-to breakfast sausage balls are perfect if you are leaning into low carb. Simply combine a pound of ground sausage, one egg, a block of softened cream cheese, and a cup of shredded parmesan cheese. Form into balls and bake at 350 until done.

You can always use frozen waffles. Then add the peanut butter and jelly, but it wont be as cost-effective.

Unsweetened applesauce is a great substitute in baking, especially when it replaces fat and/or refined sugar.

You can replace 1 banana with 1/2 cup of applesauce, but avoid using more than 1 cup total applesauce in a recipe. Doing this will make your baked goods very dense and too wet. As a result, they may not set up during baking.
To make this banana oatmeal cookie recipe vegan, you can replace one egg with 1/4 cup of applesauce. But again, avoid using more than 1 cup of applesauce for the entire recipe, regardless of what you’re using it as a replacement for.
TIP: If you do use 1 full cup of applesauce and you want to give the oatmeal cookies a lighter texture, add 1/2 teaspoon of baking powder to the recipe.

I have some favorite ingredients that I use all the time:

They are full of fiber, are naturally gluten-free, and help your digestive system work better.
Most breakfast meal prep recipes require some type of milk. There are many types of milk: almond milk, coconut milk, rice milk, soy, milk, oat milk.
My favorites are oat milk and almond milk. You can use standard dairy milk if you prefer, but I found that plant-based milk works best for me.
Its easier to digest and has less saturated fats.
But please, read the labels: make sure the plant milk you buy doesnt contain any additive or added oils. It can be hard to find pure plant-based milk.
I cannot live without my daily banana. Bananas are the perfect sweet addition to overnight oats, chia puddings, breakfast cookies, muffins. They are naturally sweet, full of fiber and minerals like potassium, great for maintaining healthy blood pressure.
Avocado is so versatile. Its incredibly nutritious, full of healthy fats, antioxidants, and fiber, and it helps to keep you fuller for longer. You can just mash it and eat it on toast, add it to smoothies, breakfast bowls or just slice it and eat it raw.

Bake time 40 minutes at 350 degrees
Yield 3 mini loaves or two dozen muffins
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
Mix in a big bowl in order and pour into greased mini loaf pans. Bake at 350 degrees for 40 minutes or until a toothpick comes out clean
Either spread. Cream cheese on them or make a cream cheese frosting.
Add one brick of cream cheese, softened to 1 cup powdered sugar, and one teaspoon vanilla. Whip until creamy and fluffy. Spread on top or pipe inside coming from the bottom.
