You can absolutely make hash brown casserole ahead of time and freeze it. In fact, thats the way I make mine most of the time. You can freeze it before you bake it or after. I find it is best when you make it without baking, freeze it, and then cook it fresh on the day you want to serve it.

This recipe freezes beautifully. While potatoes dont always freeze and reheat well, you can use pre-frozen potatoes such as frozen hash browns without issue.

This casserole with hash browns is my favorite breakfast recipe. I have used it for Christmas breakfast and have even brought it into work for a special treat. Family and co-workers love it and ask me for the recipe. Even though it has to set overnight, it is well worth the prep and wait!

Why Make A Breakfast Casserole

Breakfast casseroles are the way to go when entertaining. They can be assembled in advance and thrown in the oven as your company starts to arrive. You do want to allow for about 10 minutes for this casserole to set up after removing it from the oven.

This breakfast casserole is the perfect dish for entertaining, busy mornings, or weekend brunch. Heres why:

    In the unlikely event you find yourself with leftover casserole, you can simply put some aluminum foil over your baking dish, making sure to wrap the dish tightly, and pop it into the fridge to be reheated the next day.

    Then, when you are ready to enjoy hashbrown casserole leftovers, either put the entire dish in a preheated 350°F oven, or scoop out just enough for a single serving, and place on an oven-safe dish. As an added leftover bonus, you could sprinkle a handful of corn flakes over the top for maximum crunchiness with each bite.

    This is also the kind of dish that freezes well. If youre planning ahead or want to make the dish for a friend or family member in need of a home-cooked meal, be sure to let them know the casserole can stay frozen for two to three months.     How To Store + Reheat Leftovers

    If you have leftover casserole, heres how I recommend storing and reheating it.

    In the fridge: After allowing the breakfast casserole to cool completely, cover and store leftovers in the refrigerator for up to five days.

    In the freezer: Let the casserole cool completely then potion it out into individual pieces and store in the freezer for up to 3 months.

    To reheat: You can either use the microwave, oven or toaster oven to reheat the casserole. I prefer the microwave or toaster oven for individual pieces and the oven for reheating the entire casserole. See my note above for instructions for reheating the whole casserole in the oven. If reheating from frozen, let the casserole thaw in the fridge overnight before reheating.

    Yes, this casserole takes a bit of baking time, so its fine to prepare it the night before. I would prepare the casserole as recipe states, skipping the 20 minute bake time for the hash browns. In the morning bake for around 45 minutes covered and 30 minutes uncovered. You might need to add 10-15 extra minutes since itll be cold coming from the refrigerator.

    This recipe is super easy to make with only a few simple ingredients. Place frozen hash brown patties in the bottom of a baking dish sprayed with cooking spray. In a large skillet, cook sausage until no longer pink. Drain excess grease. Sprinkle the cooked sausage crumbles over hashbrowns. Top with shredded cheddar cheese. Whisk together eggs, milk, garlic powder, onion powder, dry mustard, and sour cream in a large bowlseason with salt and black pepper. Pour egg mixture over sausage. Bake uncovered in a preheated oven until the eggs are set.

    Sausage Egg & Cheese Hashbrown Breakfast Bake

    I use a deep 9 x 13 baking dish for this recipe. Lightly spray the casserole dish with some non-stick cooking spray then add the shredded hash brown potatoes to form the bottom layer.

    To keep things simple, I just add the refrigerated hash browns as they are. If you really prefer crispy hash browns and want that texture in your casserole, then you can brown them in a large skillet over medium-high heat before adding to the baking dish.

    How To Make Hash Brown Casserole:

    Ingredients:

    • 10.5 oz. can cream of mushroom soup
    • 1 large onion, chopped
    • 1 1/4 cup shredded cheddar cheese
    • pepper to taste
  • Bake at 350° in a greased casserole dish for an hour.
  • Top it with ketchup, salsa, or hot sauce if you want.

    Crock Pot Cooking instructions:

  • Dump bag contents into your slow cooker and cook on low for 3-5 hours.
  • Note that because of the potatoes and cheese, this casserole tends to stick to the crockpot, so I tend to use a Slow Cooker Liner when I make this dish.

    If desired, you can serve with ketchup, salsa, or hot sauce.

    Recipe Variations:

    • Brown Italian sausage or breakfast sausage and stir it in to add protein and flavor. This is one of our favorite versions. When I add sausage to mine, I also add a can of evaporated milk so that its not at all dry.
    • Change the type of cheese used. Sharp cheddar, jalapeño jack, or a tex mex blend are all nice options.
    • Add cubed ham or crumbled bacon.
    • Stir in some vegetables such as diced red or green peppers, jalapeños, or diced green chilies.
    • Top it with a mixture of butter and breadcrumbs or Cornflakes on the day of cooking.

    Make In Advance And Storage

    You can prep and serve this hash brown casserole right away, assemble it the night before, or freeze for later.

    • Leftovers: cool completely, then store in an airtight container in the fridge for up to 3 days.
    • Make it ahead of time: want to prep this the night before serving? No problem. Simply assemble as you would up to pouring the eggs over the hash browns. Then cover tightly with plastic wrap and refrigerate up to 24 hours in advance. Remove from the fridge when the oven is preheating and add an extra 10-15 minutes to the total baking time.
    • Freeze for later: bake in a freezer-safe pan and cool completely. Wrap well in plastic and again in foil and freeze for up to 2 months. Thaw overnight in the fridge, then cook at 350 degrees F for about 30 minutes until warmed through.

    • It is best to use DEFROSTED hashbrowns for this recipe. You can brown your hash browns first before layering in your baking dish if you prefer the texture of crispy hash browns mixed with creamy eggs.
    • If you opt to use tater tots instead of hashbrowns, do not defrost before layering in your casserole, but you will need to increase bake time by 5-10 minutes.
    • Feel free to use only ½ pound of sausage instead of a full pound if you would like to cut back on the amount of sausage used.
    • This breakfast casserole recipe can easily be doubled to feed a crowd. Most bags of frozen hash browns come in 32 ounces and this recipe only calls for 16 ounces. Prepare as directed, but bake in a 9×13 pan.
    • Feel free to add an additional 2 eggs to the custard if you like a really thick layer of eggs–just increase the bake time by 10 minutes.
    • Be sure your pan is a 9×9 or 11×7 or you may need to increase bake time by 10 minutes.

    • Hash browns: Feel free to use a refrigerator package of hash browns or a frozen one. Just make sure its thawed completely if yours was frozen.
    • Sausage: I use regular pork sausage, like Jimmy Dean, the kind that comes in a large round roll. You could also substitute turkey sausage. But it does need to be cooked and crumbled to use in this recipe, so please plan accordingly.
    • Bell pepper: I like using a mix of red and green bell pepper, especially at the holidays, but you could use all one color if you prefer.
    • Milk: Using whole milk, 2% or half and half adds some extra creaminess and richness to this casserole. However, skim milk or a fat-free half and half would be fine, too.
    • Cheese: Shredded cheddar cheese is my go-to, but you could mix it up and use Monterey Jack cheese or a Mexican blend cheese for this casserole if youd like.
