First, put 4 quarts of water with a dash of vinegar on to boil. Then take gluten-free bread. Using a cup or round cookie cutter, cut out the center of your bread. Then stretch and mold the bread into a muffin tray. Toast them in the oven for 15 minutes at 350. As the bread baskets toast, crack the desired amount of eggs into the boiling water. Cook for 2-4 minutes. Place the poached eggs into the baskets and top with chopped spinach. Enjoy!

For the best results, I recommend using a plant-based buttermilk made with coconut milk and a soy-free plant-based butter.

This healthy breakfast oatmeal cake is basically an oat porridge with fruits, baked upside-down in the oven.
The bonus is that you can cut and store it in the fridge for future breakfasts, just add some toppings or fresh fruits and voila!
To make it, first you cook the apples in a skillet with coconut oil and cinnamon until soft and brown. Arrange banana slices at the bottom of the pan and follow with a layer with cooked apples.
Mix all other ingredients and pour the batter onto the cooking pan. Bake for approximately 25 minutes and ready!

Something that will make sure your muffins will rise is to mix the flour mixture well. The more you mix the flour, the lighter and airy the flour is. Another thing you could do is add an acid, like apple cider vinegar. Add 2 teaspoons of an acid and you should be good to go.

Yes! I prefer to use fresh blueberries, but frozen blueberries work as well. A tip is to wash the blueberries before you add them to the mix. Keep rinsing them until the water is a lighter color. Dry them with a paper towel and fold them into the batter. Do not overmix as the juices from the blueberries will stain the batter.
Can you freeze them?
Absolutely. This is my favorite thing to do because it makes breakfast time so much easier on school days. All you have to do is take the muffin out of the freezer, warm it up, and boom, you are ready to go. Before freezing these gluten-free blueberry muffins, you will want to make sure they are at room temperature. Then, place them in an airtight container or freezer bag. They will last in the freezer for about a month.

In order to help COMBAT that chronic inflammation, we need to first make some MAJOR lifestyle changes . Oops, Im failing at that.
We also need to MAXIMIZE certain nutrients in our diet, such as omega 3 rich foods , anti-oxidants, minerals, Vitamin D, probiotics, water, and so on and so on. Temporarily removing a dairy, and maybe even certain types of grains can help absorb your body absorb more nutrients and therefore reduce stress on the body. Does that make sense?
I know, youre probably now wondering but why a dairy-free Anti-inflammatory meal plan? Doesnt cultured dairy do wonder for the gut? YES, it SURE does! Grass-fed dairy thats rich in probiotics, like kefir, and yogurt, and even REAL butter, can be healthy and nourishing. Plus they are SOOOO tasty!
But heres the thing, if you are under that chronic inflammation and stress, then you might also be experiencing digest issues and food intolerances. I dont know who decided to crack eggs into an avocado and bake them, but that person is a true hero.
I would never have thought about making this protein-heavy, low-carb breakfast on my own, but now I cant get enough of it.
All youll need is an avocado, egg, crumbled bacon, and chives. It takes 20 minutes or less to make them, and they are heavenly.

Gluten & Dairy Free Breakfast Muffins With Crunchy Almond Crumble
- 50g flaked almonds
- 225g plain gluten free flour blend
- 1/2tspbicarbonate of soda
- 1/3cupalmond milkor other non-dairy milk
- 2medium eggs, room temperature
- In a bowl, combine all almond crumble ingredients.
- Mix until everything is evenly distributed.
For breakfast muffins:
- Pre-heat the oven to 180 ºC and line a cupcake tray with 9 cupcake cases.
- In a bowl, mix all breakfast muffins ingredients until a homogeneous mixture with no flour clumps forms.
- Using a spoon or an ice-cream scoop, fill each cupcake case ~3/4 full with the muffin batter.
- Sprinkle the almond crumble on top of the muffin batter .
- Bake in the pre-heated oven at 180 ºC for 20 23 minutes, or until the crumble is light golden brown and an inserted toothpick comes out clean.
- Allow to cool, and enjoy!
Storage:
- The gluten & dairy free breakfast muffins keep well in a closed container in a cool dry place for 3 4 days .
