Gluten Free Muffins With Apples And Oats
In very few of our recipes do we use gluten free flour. Instead, we try to make naturally gluten free recipes using whole food ingredients like oat flour and almond flour. Using this philosophy does make it difficult in baked goods to come up with a suitable texture. Gluten does go a long way in bringing in a fluffy, beautiful muffin texture. For these muffins weve used oat flour and rolled oats as the base for the muffin, but added a few tricks so they turn out moist and beautifully fluffy.

Can Buttermilk Biscuits Be Made Vegan
Yes, they will still be delicious! However vegan gluten free biscuits will have a slightly different taste and texture than the original recipe due to the ingredient swaps. For instance, plant-based butters do not grate as easily into the dough as dairy-based butters. Therefore, vegan biscuits wont be quite as flaky. For the best results, I recommend using a plant-based buttermilk made with coconut milk and a soy-free plant-based butter.
Gluten Free Vegan Oat Cake
See recipe card below.
This healthy breakfast oatmeal cake is basically an oat porridge with fruits, baked upside-down in the oven.
The bonus is that you can cut and store it in the fridge for future breakfasts, just add some toppings or fresh fruits and voila!
To make it, first you cook the apples in a skillet with coconut oil and cinnamon until soft and brown. Arrange banana slices at the bottom of the pan and follow with a layer with cooked apples.
Mix all other ingredients and pour the batter onto the cooking pan. Bake for approximately 25 minutes and ready!

How To Make Dairy
- Preheat oven to 375°
- In a stand mixer, combine all wet ingredients and mix well
- In a separate bowl, combine dry ingredients
- Slowly add dry ingredients to wet ingredients and mix well
- Fold juicy blueberries into muffin batter
- Fill greased muffin pan cups 2/3 full
- Bake muffins at 375° for 22-24 minutes or until golden brown
Why wont my gluten-free muffins rise?
Something that will make sure your muffins will rise is to mix the flour mixture well. The more you mix the flour, the lighter and airy the flour is. Another thing you could do is add an acid, like apple cider vinegar. Add 2 teaspoons of an acid and you should be good to go.
Can you use frozen blueberries?
Yes! I prefer to use fresh blueberries, but frozen blueberries work as well. A tip is to wash the blueberries before you add them to the mix. Keep rinsing them until the water is a lighter color. Dry them with a paper towel and fold them into the batter. Do not overmix as the juices from the blueberries will stain the batter.
Can you freeze them?
Absolutely. This is my favorite thing to do because it makes breakfast time so much easier on school days. All you have to do is take the muffin out of the freezer, warm it up, and boom, you are ready to go. Before freezing these gluten-free blueberry muffins, you will want to make sure they are at room temperature. Then, place them in an airtight container or freezer bag. They will last in the freezer for about a month.

High Protein Breakfast Ideas Gluten Free Dairy Free Vegan And Paleo Options
If one more Nutritionist tells me to eat more protein, Im going to
Well, honestly Im really going to try harder. For months youve probably noticed in every recipe I mention protein and this is not because Ive suddenly decided its what I want to talk about, rather its just what is incessantly on my mind.
Endurance athletes have higher protein needs and while I always thought I was doing a pretty good job, I never really tracked it . I knew I was eating plenty of veggies and not over doing it on calories, so what more was there really to consider.
Once we started examining my protein intake it was less than half of what was recommended for someone doing the distances Ive been doing for years. Which could explain why I was turning a bit skinny fat, losing muscle and feeling fatigued.
What better way to ensure then that I am going to get enough protein by kick starting things with a high protein breakfast to stave on RUNGER!
So without further ado, ideas galore for every potential diet! High protein breakfasts.

The Reason That This Anti
In order to help COMBAT that chronic inflammation, we need to first make some MAJOR lifestyle changes . Oops, Im failing at that.
We also need to MAXIMIZE certain nutrients in our diet, such as omega 3 rich foods , anti-oxidants, minerals, Vitamin D, probiotics, water, and so on and so on. Temporarily removing a dairy, and maybe even certain types of grains can help absorb your body absorb more nutrients and therefore reduce stress on the body. Does that make sense?
I know, youre probably now wondering but why a dairy-free Anti-inflammatory meal plan? Doesnt cultured dairy do wonder for the gut? YES, it SURE does! Grass-fed dairy thats rich in probiotics, like kefir, and yogurt, and even REAL butter, can be healthy and nourishing. Plus they are SOOOO tasty!
But heres the thing, if you are under that chronic inflammation and stress, then you might also be experiencing digest issues and food intolerances. Any food can be inflammatory if your body comes to see it as an invader under chronic inflammation. Which may include dairy, casein, and lactose included! Hopefully, its a temporary intolerance, but you never know. Which is why I suggest trying out a low FODMAP meal plan first.
No no, dont be worried, we can get this all worked out. Yes, we are going nourish the body and reduce stress.
Test, rest, reset! YES!!

Do I Have Other Gluten And Dairy Free Breakfasts
Everything we eat has to be gluten and dairy free because of my sons food allergies, so we have quite a few gluten and dairy free breakfast recipes. Here are some of our favorites, we think youll love them too!
If youre looking for some gluten and dairy free dinners, check out my cookbook: An Allergy Moms Lifesaving Instant Pot Cookbook.
*Our allergies, while severe and that get re-tested yearly, are such that we can go strictly by whats on the label. I do not call companies to see what things are derived from, or call manufacturers to see about potential cross contact. If your allergies require you to do so, please do your own homework. I cannot assure you of any ingredients safety, only you can do that. I simply share what works for our family.
**If you are going to feed this to someone with food allergies, and you yourself do not have food allergies, I HIGHLY recommend having them check every single brand and ingredient you are using, to ensure theyre OK with each part of the recipe. And, to make sure youve talked to them about how to avoid cross contamination in your kitchen.
