I dont make ground beef breakfast recipes often, but this one just gels so well. This scrambled eggs breakfast recipe is full of protein, iron, zinc, and fiber and so much flavor.
So many nutritious things! It also boasts lots of choline, a nutrient important for pregnancy.
Tips For Recipe Success
Here are some helpful tips for executing this as a make-ahead, meal prep breakfast.
Prep all ingredients before assembling. Fully cook the Ground Beef, chop the veggies, and whisk the eggs and yogurt before working with the pie dough. Once you cut the circles out, you will have everything you need to move efficiently, reducing your prep time.
Use muffin tins for 24 pies at once, if you can. It’s most efficient to make and bake all 24 pies at once, but if you dont have enough tins, do a dozen at a time. Keep the second pie dough in the fridge until you’re ready to re-use your muffin tins. You can use silicone muffin holders as an alternative to muffin tins.
Use leftover beef if you have it. You dont have to cook up the sausage in this recipe if you already have some cooked Ground Beef or Steak on hand. Simply diced it up into small pieces and add it in place of the sausage.

- Potatoes You can use any type of potato for hash. Russets, Yukon gold, red or purple, fingerlings, and even sweet potatoes, if youd like. Learn more about different potato varieties and their best uses.
- Beef broth I like to use beef broth as it adds additional flavor to the dish. But you can use water instead.
- Seasoning is such a crucial part to a great hash. Use my recommendations as a starting point and add more or less based on your taste.
- Ground beef I like to use lean ground beef. But you can choose whichever ground beef type you prefer. The difference between the different types of ground beef is the fat content and where the meat comes from.
- 70/30 ground beef means 70% lean meat and 30% fat. Typically, this ground beef is made of brisket or shank. Its ideal for juicy burger and meatballs!
- 80/20 ground beef consists of 80% lean meat and 20% fat. Its best for leaner burgers, meatloaves and chili!
- 85/15 ground beef is made of 85% lean meat and 15% fat, which is considered as lean ground beef. Its perfect for lasagna and spaghetti.
- 90/10 ground beef is extra lean ground beef made of 90% lean meat and 10% fat. Its perfect for stuffed peppers, cabbage rolls and tacos.
A Fresh Homemade Take On A Diner Favorite
The recipe I make now is a fresh and modern take on my dad’s version. I use fresh baby spinach, sliced crimini mushrooms, and lots of fresh diced garlic. I buy the bags of triple-washed baby spinach, which are almost as convenient as frozen spinach.
The whole thing cooks in one skillet, with the vegetables, meat, and eggs cooked one after the next. So easy and fast!
First, cook the mushrooms, onions, and garlic. Next, throw in some spinach and let it wilt. Then, you cook the ground beef, and finally, scramble the eggs. Stir it all together and dinner is served.
Joes Special is best served with sliced bread. Sourdough is my favorite, and its the classic San Francisco choice. Use a fork to scoot some of the scramble onto the bread and enjoy!

Top Tips For Making One Pan Cheesy Beef Breakfast Scramble
- Use lean ground beef.
- If you prefer this to be more mild, use tomatoes without green chiles. If you want it to be spicier, get the hot tomatoes/green chiles and use Pepper Jack cheese in place of cheddar.
- Leftovers can be refrigerated for 2-3 days and reheated.
- Finish the dish with fresh cilantro or parsley.
Cutting The Recipe In Half
Also, if a full 9- by 13-inch dish of breakfast casserole is more than you need, you can easily cut this recipe in half, bake it in an 8- by 8-inch dish instead, and slightly reduce the cooking time.
If you like, you could even cook and season the full pound of ground beef, then use half of it immediately and freeze the rest for the next time you want to make a half-recipe.

I also add a teaspoon of sea salt to help bring out all the flavors. If you like, you could use black pepper in place or in addition to the crushed red pepper flakes.
- Oil: I like to use avocado or olive oil when cooking this beef breakfast sausage. Any cooking oil will work, so use whatever you have on hand. You can also cook in a mixture of oil and butter.

How To Make One Pan Cheesy Beef Breakfast Scramble
- Cook beef and onion in a large skillet over medium heat, crumbling while you cook. As its cooking, season with paprika, salt, and pepper.
- When meat is no longer pink, add the hash browns and cook until thawed and tender, stirring as you cook.
- Add the water and tomatoes, undrained. Increase heat to high until the mixture boils, then reduce to a simmer. Simmer for 5-10.
- Increase heat to medium/low. Pour the beaten eggs over the mixture, cooking, and lightly stirring. Allow to cook, checking and stirring occasionally until the eggs are set to your liking.
- Finally, lay the slices of cheese over the eggs and cover until the cheese is melted, about 1-2 minutes.
- Top with chopped cilantro . Serve and enjoy!

How To Make A Cheeseburger Breakfast Casserole
To make this cheeseburger breakfast casserole start by dicing 1/2 a yellow onion and cooking the onion in avocado oil in a frying pan over medium-low until soft and fragrant. Add the ground beef to the pan to brown and season with salt and pepper. Cook the ground beef over medium until cooked and set the onion and beef mixture to the side.
Spray a baking dish with avocado oil spray and crack 12 eggs directly into the pan. Whisk the eggs together and pour the onion and beef back into the pan. Spread the cheddar cheese on top and place in the oven.
