What Ingredients Do I Need For Homemade Biscuits
Not a whole lot! And Im pretty sure you have most, if not all, of these on hand in your pantry. The one ingredient you may see in this list that could be a little unfamiliar is the cream of tartar. I use it in my Snickerdoodles recipe and love it in biscuits but if you dont have it on hand, please, dont let that stop you from making this biscuit recipe. Go ahead and omit it from the recipe.
Youll notice this list is very similar to the ingredients used in my scones recipe. My scones call for heavy cream instead of whole milk and a more substantial amount of sugar.
I should also note that my brother makes these biscuits every weekend and doesnt use the egg, like, EVER. In fact, neither does my little sister. If you want to leave it out, go ahead.

So What About Biscuits And Gravy
Then there is the aforementioned biscuits and gravy. At this point youll not be surprised to know that the gravy is not like British gravy either!
Sausage Gravy is made with actual sausage and milk. Its very tasty but not photogenic! But lets concentrate on the Buttermilk Biscuits for the time being.
Breakfast Biscuits are similar to scones but without the sugar. The other difference is that theyre more buttery and are made in layers. So theyre flaky rather than crumbly.
I make them in a similar way as puff pastry. The dough is rolled out, folded and rolled again. The folds are repeated twice more and then the biscuits are cut.
Because Biscuits are a quick bread, just like Soda Bread, they dont use any yeast and theyre ready in under 25 minutes.
Ingredients For Easy Homemade Biscuits
This recipe only has 3 simple ingredients you probably already have in your kitchen.
- Flour – This recipe uses self-rising flour because it contains baking powder which reacts with the buttermilk allowing the biscuits to rise.
- Butter – Make sure your butter is very cold before using. If your kitchen is warm, it’s best to freeze the butter for 20 minutes ahead of time. Cold butter releases steam while baking and forms air pockets within the biscuits that produce a light and fluffy texture.
- Milk – Only use buttermilk for this recipe. It reacts with the baking powder in the self-rising flour allowing the biscuits to rise. No other type of milk will work for this recipe.

A Few Notes On Butter In Homemade Biscuits
The butter is possibly the most important part of this recipe, and the way you handle it can make or break your homemade biscuits.
While you can certainly use a pastry cutter to cut your butter into the dry ingredients, I recommend freezing your butter for about 30 minutes before beginning. Then, use a box grater to grate the butter before combining this in with your dry ingredients.
I use this technique in my scone recipes and highly recommend it with these biscuits, too. Not only is it much easier than using a pastry cutter, but it does a great job of finely shredding and distributing the butter throughout the mixture without overworking the butter .
Alternatively you could also use a food processor , but its just so easy to grate in the butter that I always use this method instead.
And yes, I do recommend using unsalted butter in this recipe and then adding salt. If you want to know more about why I write my recipes this way, you can read all about it in this post that I wrote about salted vs unsalted butter.
I know Ive mentioned to you guys a few times that Ive been working on a baking contest/challenge/Im really not sure what to call it, but Im planning a post where I encourage all of you to bake along with me. The goal is to get people baking recipes they may have not tried before, and Im encouraging everyone to share their results for a chance to win a small prize.
Tips For Making Homemade Biscuits
- The butter and milk for this recipe need to be as cold as possible for fluffy and soft biscuits. I freeze my butter before using it and recommend keeping the milk in the refrigerator right up until its time to add it to the dry ingredients.
- Dont overwork the dough! Keep in mind that you want your butter to stay as cold as possible when making these biscuits, and the more you have your hands on the dough the softer the butter will become. Definitely dont use an electric mixer for this recipe.
- Were going to do a little bit of laminating. This means folding the dough over itself multiple times to encourage flaky layers in our biscuits. You can watch the video below to see exactly how this is done.
- Dont use a rolling pin, use your hands to gently work the dough into a flat rectangle before cutting out your biscuits.
- Dont be afraid to add flour to the dough if its too sticky while you are handling it .
Visual clue: If you look at the pre-baked biscuit below, youll see that you can actually see the butter pieces in the dough. This is what you want, the ingredients wont be well-combined like with a cookie dough and seeing bits of butter means youve actually done everything right here. Hooray!

How To Make Buttermilk Biscuits
Before you start the recipe, its important to note that you need to use cold butter and buttermilk in these biscuits. Prepare your dry ingredients first, then take your butter and buttermilk out of the refrigerator to ensure that they stay cold.
- Prepare the dry ingredients: Whisk together the flour, baking powder, baking soda, sugar, and salt in a large bowl.
- Add the cold, cubed butter to the flour mixture: The butter can be cut into the flour mixture using a fork, a pastry cutter, or a food processor. You want to see small pea-sized crumbs of butter in your dry ingredients, a few larger pieces are okay though.
- Add the buttermilk: Pour the cold buttermilk into the bowl and mix just until the dough starts to come together.
- Work the dough together: Turn the dough onto a lightly floured surface and very gently work it together with your hands.
- Fold the dough: Form the dough into a rectangle, fold it into thirds like a letter , and then pat it back out into a rectangle. This folding process needs to be repeated two more times. These layers result in ultra flaky, fluffy buttermilk biscuits! Trust me here, its worth the extra step.
- Pat out the dough: After the dough has been folded a third time, pat it out into a 1/2-inch thick rectangle. Make sure to measure here! If the dough is too thin, the biscuits wont rise very tall.
