Use a piece of parchment paper and roll out the dough to a 10-12-inch rectangle.

How To Make Breakfast Pizza With Eggs
Adding eggs to breakfast pizza is as easy as scrambling eggs. The number of eggs to use depends on the size of the pizza. If youre making a large one that will serve four to five people, use seven or eight eggs. For a small individual pizza made on an English muffin, scramble one or two per person. If youre making five mini pizzas, you can scramble each persons portion individually or together in one large batch. Doing the latter will save time and allow some to take more and others to add less.
To avoid the eggs drying out while cooking, its best to put them on top of the sauce or under a bit of cheese. Either of these methods prevents the egg from getting too dry while cooking at a high temperature.

How To Make The Best Breakfast Pizza Recipe:
Preheat oven to 425F degrees. Spray a large baking sheet with nonstick cooking spray. Spread the pizza crust into the pan. Stretch it out to all the edges. Brush olive oil evenly on top of the crust. Poke the crust really well with a fork
Bake the crust for about 7 minutes on a middle rack. It should just start to be getting very light brown in color.
While crust is baking, start making the scrambled eggs. In a medium-sized bowl, add eggs, salt, pepper and milk. Whisk eggs really well for at least 2 minutes to get it combined.
Preheat a pan on low to medium heat. Add butter. Once butter is melted, pour in the egg mixture. Gently scramble the eggs. The key to good scrambled eggs is to not cook them too fast or else they get rubbery. So just slowly move the eggs around until softly scrambled and fluffy. Turn off heat.
When crust is ready, remove it from the oven. Spread the sausage gravy evenly over the crust.
Top the sausage gravy with scrambled eggs.
Then top the eggs with shredded cheese. Finally, sprinkle the bacon pieces evenly over the cheese.
Place baking pan back into the oven and cook for another 6-7 minutes.
Slice into 12 slices. Then serve while warm.
How To Cook Eggs On Pizza:
Cooking eggs on pizza can be a little tricky, especially with an artisan pizza dough.
There are two main ways to do this.
The first way is the safest and most common: crack an egg into a small bowl, make a well in the toppings and pour the egg in the hole. Repeat with remaining eggs, then transfer pizza dough into the oven.
The problem I often come across is jiggling the raw egg out of the well while Im trying to slide the dough into the oven. If you have even the slightest bit of dough sticking on the paddle, which can usually be resolved by an aggressive shake, youll lose your egg! Its kind of stressful.
The second way is easier, but considered more dangerous: add the eggs in the oven.
First, crack the eggs into little bowls several individual bowls is ideal so you can move quickly while the oven is open. Make the pizza with all the toppings except the eggs. Slide the pizza into the oven, then use a spoon to make wells in the toppings. Plop the eggs into each well and youre done. You want to keep as much heat in the oven as possible, so work quickly and close it up. Obviously, the oven is 500°F, so be very careful as you fiddle in there.
Heres a third option if neither of these sound fun to you: make the pizza and plop on a perfectly fried, sunny side egg at the end.

How To Prep This Breakfast Pizza Ahead:
You know I have big love for recipes that I can prep ahead to make our lives easier! Here are a few different ways:
- prep the pizza dough up to 4 days in advance and stash it in the freezer, covered in plastic wrap.
- cook the eggs and bacon and store in an airtight container in the fridge for up to 4 days before making your pizza
- shred the cheese and store in the fridge for a week or two, or purchase pre-shredded cheese
- Assemble the pizza entirely but do not bake cover lightly with plastic wrap and store in the refrigerator up to 24 hours before baking

Can I Freeze Breakfast Pizza
If you want to make this recipe ahead to keep in the freezer, I recommend par-baking the crust before topping. Simply bake at 425 for 5-7 minutes, until dry-looking but not yet browning.
Remove from the oven and cool completely.
Top with your cooled pizza toppings and cheese. Wrap in plastic wrap and tin foil , then freeze for up to 3 months!
To serve, you can place in the oven right out of the freezer and bake until heated through, about 20 minutes at 400 degrees F.
Working With Homemade Pizza Dough
Stretching pizza dough can sometimes be challenging, but with a few simple tips, anyone can master the task or at least make it presentable. Remove the dough from the refrigerator and place it in an oiled bowl. Cover and let it warm for about an hour. Gluten is much easier to work with when the dough is warm. Then press and pat your dough out. You can lift one side of the dough, letting it stretch naturally. Place in the baking sheet, and working with your hands, work the dough out. If it shrinks back, rework it in a few minutes.

Its simple with this recipe and you dont even need any special tools or equipment.
First, mix the dry ingredients together: 1 cup of flour, sugar, salt, and yeast.
Then, add the wet ingredients: hot water and oil. The important part about the wet ingredients is that the water must be hot . If you have an instant read thermometer, use it to test the water. Otherwise, just think hot bathwater when testing it.
Stir the mixture together until its a wet mixture.
Then add more flour, just enough that it comes together in a ball. I find that adding about 1/2-3/4 cup is perfect. Stir it together until it forms a ball. Itll be a bit sticky but not too wet.
Then turn the dough out onto a floured surface.
Add more flour and knead it for a few minutes, or until it forms a non-sticky ball and the dough bounces back when you touch it.
