How To Make This Recipe:
In a small bowl stir together pure maple syrup salt, dried sage, pepper, and dried marjoram leaf to create a slurry then pour it over ground pork and mix with your hands until everything is just combined. Resist the urge to over-mix lest your sausage patties turn out tough and rubbery.
Shape the mixture into 12 patties then place on a plastic wrap covered baking sheet, cover, and then refrigerate overnight to give the flavors a chance to meld. You absolutely CAN cook the sausage patties right away, but theyll taste best after the flavors have had a chance to meld.

What Gives Breakfast Sausage Its Distinct Flavor
Pork meat has a mild flavor that can be mixed and matched with many different seasonings and spices. Fennel, sage, rosemary, thyme, garlic, smoked paprika, black pepper, coriander, and sage are all savory spices with a depth of flavor and are delicious mixed with ground pork.
Some people may have issues with some seasonings. In this case, they can just use salt and fresh ground pepper with some parsley if they like or they can use most of the spices above and just omit the ones they don’t enjoy.

Using Your Homemade Breakfast Sausage Seasoning
Like I mentioned in the intro, my favorite use for this seasoning is making chicken sausage with ground chicken. For the sausage patties, I massage the seasoning into the ground chicken and make 10 patties out of a pound of ground chicken. Pan fry in a tablespoon of olive oil and youve got perfect breakfast sausage thats low fat and low calorie. This method would work for any ground meat.
An even easier cooking method is to use the seasoning to make breakfast sausage crumbles. For this method, youll basically use your breakfast sausage seasoning like taco seasoning. Cook ground chicken, turkey, pork, or your choice of meat in a skillet and add the seasoning towards the end of cooking. Thats it. Add a little butter, flour, milk, and white pepper and youve got sausage gravy on your hands!

What Type Of Meat To Use
A lot of homemade breakfast sausage recipes are pork-only, or even a mixture of ground pork and beef.
However, when I make breakfast sausage, I prefer using a mixture of ground pork and ground turkey.
Why? Because pork gives it moisture while turkey lightens things up, making the sausage a little healthier and preventing it from being overly greasy.
Plus, mixing two meats gives the sausage a depth of flavor and perfect texture that I don’t think you get from just one kind of ground meat.
How To Make Breakfast Sausage
Have you ever made Homemade Breakfast Sausage? After you’ve made it once, you’ll wonder why you never did so before. It may seem daunting, but it’s really not…in fact, it’s ridiculously simple. But the best part is that YOU control the spice blend . And YOU know exactly what’s in it .
In case I haven’t already mentioned it , making breakfast sausage is quick and easy. First, mix the spices together in a small bowl and set aside. Then get out a large bowl and toss in a pound of ground pork and a pound of ground turkey. Sprinkle the combined spices over the meat and drizzle with the maple syrup.
Using your hands to mix everything together is probably the most efficient tactic, but if you don’t like touching raw meat, a large spoon will work as well. Either way, you’ll want to mix until all the spices are thoroughly dispersed throughout the meat.
After the sausage mixture is well-combined, form it into 16 balls using your hands, a spoon, or a cookie scoop. Place them on a plate or a pan and flatten into 3-inch patties.
Set a large, deep skillet over a burner set to medium-high heat. Once the skillet is hot, arrange some patties in the pan, working in batches as necessary. Cook the patties for about 5 to 8 minutes, until they’re nice and brown on the underside. Then flip ’em, cooking on the second side until browned .

There are three steps to making great sausages.
Should I Use Fresh Or Granulated Garlic In My Homemade Sausage
Garlic combines three of our favorite aspects of cuisine. The taste, scent, and texture are all amazing in every way. Unfortunately, when its new and freshly chopped, it degrades quickly. Because its been crushed down from a dry clove, granulated garlic is simply lacking in texture. It has the same great flavor and perfume as fresh garlic, yet it doesnt deteriorate nearly as rapidly! If youre cooking a large amount of sausage and want to freeze it for later, granulated garlic is the way to go. You can definitely get away with using fresh garlic if youre just preparing a small batch of breakfast sausage for the week or some sausage links to fry up or toss on the grill for a dinner party this weekend. It all boils down to personal preference and preparedness. Garlic is a fantastic taste for homemade sausage in any case.

Step 2: Forming and Frying The Sausage Patties
Next, roll the seasoned meat into about 6-8 medium-sized balls, depending on how big you want your sausage patties to be. Then lightly press the balls to form them into a patty shape- about ½-inch thick.
Now, take out your skillet, add the olive oil to it, and heat the skillet over medium heat.
Then fry the sausage patties for about 10-12 minutes on one side, flip them over, and fry for 5-6 minuteson the other side, until brown. You’ll want the internal temperature to be at least 160°F .
Keep in mind that you might have to cook the sausages in batches depending on how big your skillet is.
Step 3: Serve
Once you’ve cooked all of the sausage patties to perfection, you can serve it up with whatever you want!

Ive recently started experimenting with making my own fresh sausages and Ive been loving it. I really love sausages but I am always skeptical about the length of time some sausages spend in supermarket coolers.
Seems like there must be a lot of preservatives in there to give them the kind of shelf life that some of them have printed on the label. Plus you never know what they are using for binders and fillers.
They are almost always way too salty for my taste. And I just want to feel a little better about indulging in one of my favourite things to serve for weekend brunch.
Southern style breakfast sausage is one of my favourites. So, I have been working on getting the seasoning just right in a good easy homemade version.

Be sure you have plenty of those light flaky biscuits on hand to serve with this tasty sausage. While youre at it, make a larger batch to freeze for up to a couple of months and enjoy these at brunch for several weekends to come.
When I make a large batch I generally will form half of the sausage meat into patties and stuff the other half into casings to vacuum seal for the freezer.
