I Ate Veggies For Breakfast Every Day For 1 Month Here’s How It Affected Sugar Cravings

How to Eat Vegetables for Breakfast WITHOUT Having A Savory Meal

I haven’t eaten meat for more than 30 years, haven’t eaten dairy for over six years, and stopped eating eggs over a year ago. Embracing a whole-food, plant-based, oil-free diet has made me feel incredible. My skin is clearer, I no longer get sinus infections, my bloating improved, I sleep well, I’m energetic, happy, and healthy, but I’ve noticed that I still battle with extreme, insatiable sugar cravings. Baking is one thing that brings me joy and relieves stress, and I love enjoying the treats I make, but what I hate is that my stomach feels so terrible if I eat too much, and yet, it doesn’t stop me from wanting to eat it all the time.

I heard that eating veggies for breakfast could help decrease sugar cravings. It sounds a little farfetched, I know, but I was willing to try anything. I’ve done other fun healthy eating experiments, like eating a big salad for dinner or eating an apple every day, and this seemed like a pretty healthy, doable thing I could try. Keep reading to find out what happened when I ate one pound of veggies for breakfast every day for a month.

The Morning Meal Without Eggs

What if youre not an egg person? Well, there are plenty of ways of adding veggies to your morning meal too. Lets dig deep into two concepts: warm breakfast salads, and veggie breakfast bowls.

Salads are not very popular, not even for lunch or dinner, but we should work on that because salads are more than a dish, theyre a white canvas for innovation.

The secret behind a breakfast salad, or any salad for that matter, is adding as many flavors, colors, and textures as possible.

Think of a lettuce base with olives, bell peppers, cherry tomatoes, and grilled chicken. How does that sound for tomorrows breakfast? Pick a leafy base, whether its romaine or kale, and top it with veggies and a good portion of protein.

Of course, eggs can play a significant role in these salads, but there are many other protein options, from tuna to tofu, and from sprouts to skirt steak.

Veggie breakfast bowls are aligned with breakfast salads but have less leafy greens. Think of breakfast poke bowls. Use potatoes, sweet potatoes, or grilled corn kernels as a base and add color and texture with the veggies available.

  • Fast and easy, salads and bowls are great ways to have healthy breakfasts to meet your dietary goals. Combine protein, carbs, and lots of vegetables and play with flavor, color, and texture combinations.

Can Roasted Vegetables Be Made Ahead Of Time

Sure! Put the finished roasted breakfast vegetables in a 8×8 or 9×13 pan . Before you’re ready to serve just warm them up covered in a 350 oven for 10-15 minutes.

Why are my roasted vegetables mushy?

You probably over crowded the pan which caused the vegetables to steam and not brown. It’s best to use two sheet pans instead of loading up one.

Do you season vegetables before roasting?

I like to toss my vegetables with olive oil and salt and pepper before roasting for an even layer of seasoning.

Why You Should Be Eating Vegetables For Breakfast

Our contributing health writer, Heidi Sze, on why we all need to embrace our greens at the most important meal of the day.

I dont know about you, but Im tired of cereal for breakfast. Since when did a box of grains become the mainstay morning meal? I suppose the Kellogg brothers have something to do with it, but isnt it time we broaden our breakfast horizons and break free from bowls of pressed, rolled and flaked grains? Im ready.

Please know that I am not anti-grains by any means. I am a bigger porridge fan than most and have been known to hide my favourite granola in the back of the pantry where no one can find it. I also appreciate that grains have always been a cheap option, but these days that doesnt necessarily hold true, and dont you feel like mixing things up? I dont mean switching to toast with jam, thats equally predictable. These options of grains with milk and toast with spread lack colour and nutritional variety, and as a result do not do the best job of setting you up for the day. If youre wanting to feel sunny on your commute to work, submit an excellent proposal by 11am and make nourishing food choices for the rest of the day, ditching the breakfast classics every now and then may be a good move.

Whatever preparation appeals, you can be sure that including a bundle of veg at breakfast will always be a good idea. And isnt it nice to be making great decisions so early in the day? You can tick being awesome at life off your daily task list.
